Nicola was born and raised in New Zealand where she attended school and spent idyllic summer holidays with her family, water skiing and fishing on the southern lakes.
She spent her youth working in her parent’s café and after completing her education, began her career in the hospitality business. Nicola first attended culinary school and then progressed from dishwasher to managing ‘Vivace’, a busy inner city café in Christchurch.
Like many Kiwis, in her early twenties, Nicola spent a few years living and working in the UK, which ignited a passion for experiencing new and different cultures, food and wines.
In 2004 Nicola acquired and for five years operated, her very own Bistro and Café in Wellington, New Zealand. She then moved to Australia where she worked in Melbourne’s renowned Italian restaurant, Il Solito Posto and popular chic bistro, The Carlton Wine Room.
Returning to Wellington, Nicola first experienced the yachting business as head chef on M/Y Sweet Georgia and subsequently worked on a number of yachts and in prestige villas in various corners of the world. In 2018 she joined SALU and is happy to confess that she has finally found her home on the sea and is passionate to bring her wealth of experience to serving SALU’s guests.
